Similar problems happened (sporadically) when I was running El Capitan and Sierra as well, though not as regularly as they are now. I have downloaded the Legacy version of Java as instructed, but the above problems still happen. If I try to change the font: IT CRASHES, if I try to change the document settings: IT CRASHES. Since updating my (late 2013) iMac to OSX High Sierra, my copy of Adobe Illustrator (part of the CS5) suite keeps crashing. so download, install and share the report here. This is little app that gives a snapshot of what is running on your mac (no personal info is listed) and can help with diagnosing problems. If that doesn't work then we would like to see the output of an Etrecheck report, Sierra would have needed the Legacy Java Runtime to open CS5 so you should have had it already installed, just to be sure this is the download you want, Download Java for OS X 2015-001 download and double-click to install, so you might want to try that again. If it was working in Sierra then it should be running in High Sierra, my Adobe products haven't been affected by the upgrade. If you can't read the screenshot just click and drag onto Preview to open it up. Roaring apps is a site that is often recommended here, from the screenshot below you can see that Illustrator CS5 is fine with High Sierra, but Illustrator CS5.1 has not data as yet.

When I updated my software to High Sierra, my system told me to download a legacy version of Java, to enable my (admittedly) old version of CS5 to work with my spanking new High Sierra, but even though I did this, it still crashes.

When I go to change a font: it crashes, when I want to change my print mode: it crashes, ifI take more than a few seconds to change the document set-up: it crashes! However since (some may say 'foolishly') updating my OSX to High Sierra, my programme 'crashes' etc when using Illustrator are getting beyond a joke. I have been working round the various little problems I encounter when running Illustrator (part of the Adobe CS5 package), whilst using my Sierra software on my iMac (late 2013).
